Grilled Lemon Barbecue Chicken

Ingredients
- 4 bone-in, skin-on chicken breasts (or thighs) 
- 2 lemons, one juiced and one sliced 
- ¼ cup olive oil 
- 3 cloves garlic, minced 
- 1 tbsp honey 
- 1 tbsp apple cider vinegar 
- 2 tsp smoked paprika 
- 1 tsp dried thyme 
- Salt and freshly ground black pepper, to taste 
- Fresh parsley, for garnish 
Instructions:
- Marinate the Chicken: - In a large bowl, whisk together the lemon juice, olive oil, minced garlic, honey, apple cider vinegar, smoked paprika, thyme, salt, and pepper. 
- Place the chicken pieces in the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor. 
 
- Prepare the Barbecue Sauce: - In a small saucepan, combine ketchup, brown sugar, Worcestershire sauce, lemon juice, garlic powder, onion powder, cayenne pepper, salt, and pepper. 
- Cook over medium heat, stirring occasionally, until the sauce thickens slightly (about 10 minutes). Set aside. 
 
- Preheat the Masterbuilt 1050 Grill: - Preheat your Masterbuilt 1050 Digital Charcoal Grill to a medium heat of around 350°F (175°C), ensuring it's stable before cooking. 
 
- Grill the Chicken: - Remove the chicken from the marinade, and place it skin-side down on the grill. 
- Cook for about 6-7 minutes per side, or until the skin is crisp and golden. 
- Brush the chicken with the prepared barbecue sauce and continue to cook, turning occasionally, until the internal temperature reaches 165°F (74°C). This should take about 25-30 minutes in total. 
- During the last few minutes, place the lemon slices on the grill to get charred. 
 
- Rest and Serve: - Let the chicken rest for a few minutes off the grill. Serve garnished with grilled lemon slices and fresh parsley.
